More Gifts in a Jar

This Christmas, I asked for gloves.  Fleece gloves, preferably.  I use a lot of canning jars and happened to see one of my children “wrapping” my  present.  She took a pair of fleece gloves, rolled them up, and tucked them into a Mason canning jar.  Then she put a ribbon on top.  How cute!

Toffee Muffins in a Jar

I have a fondness for toffee (don’t tell my dentist).  My kids know this and always manage to find a way to sneak some toffee under the tree.  😉

Ingredients

  • quart sized canning jar
  • 3 c flour
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2/3 c brown sugar
  • 8 oz toffee pieces (in the baking aisle)

Directions

  1. Preheat oven to 400 degrees F.
  2. Line 24 muffin cups with cupcake liners.  (This will take two cupcake trays.)
  3. Combine 1 c milk, 1 c sour cream, 6 Tbsp melted butter, 2 eggs, and 2 tsp vanilla.  Mix well.
  4. Slowly blend in the contents of the jar.
  5. Spoon into muffin cups until two thirds of the way full (when making cupcakes fill 3/4 but only 2/3 when making muffins).
  6. Bake 16 to 18 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool 10 minutes.
  8. Remove from pan and serve.  Tastes awesome with French vanilla ice cream.

Choconut Cookies in a Jar

Sometimes when I make cookies I spread them in a pan so they bake more like brownies.  This is one of those recipes, made with chocolate, nuts, and coconut.  If you do choose to make them into brownies, spread them in a 9″ x 9″ Pyrex glass baking dish and bake at the same temperature until cooked.

Ingredients

  • quart sized canning jar
  • 1 1/4 c flour
  • 1/4 tsp baking powder
  • 1/8 tsp baking soda
  • Pinch of salt
  • 1 c brown sugar
  • 1/2 c flaked coconut (in the baking aisle)
  • 1 3/4 c chopped walnuts
  • 2 oz unsweetened chocolate squares (Baker’s brand)

Layer the ingredients in the canning jar in any way you like.  Tie a ribbon around the top and gift with the directions below.

Directions

  1. Preheat oven 350 degrees F.
  2. Pour contents of the jar into a large bowl and mix well.
  3. Fish out the squares of chocolate and melt in double boiler.
  4. With electric mixer blend 1/2 c melted butter, 1 egg, and the chocolate for 2 minutes.
  5. Slowly add the chocolate mixture to the jar mixture and blend well.
  6. Drop by teaspoonfuls onto a large baking stone or greased cookie sheet.
  7. Bake 10 to 12 minutes.
  8. Let cool 15 minutes before serving.

Makes 4 dozen cookies.
